My neighbor gave me this recipe the other day when we traded vegetables from our gardens. He traded me cucumbers and limes for tomatoes and peppers. Worked out great. Anyhow, I finally made it today and it’s pretty good. Would probably be good with vodka too.
Lime Cucumber Aqua Fresca
3 peeled cucumbers
10 Mexican limes, juiced
In a blender, add peeled cucumbers and lime juice. Add 1 cup of water and blend. Strain out pulp and let liquid run into a gallon pitcher. (You could probably keep the pulp if you want.) Add water and sugar to taste. Serve cold or over ice. Recipe says 1 cup of sugar to 1 gallon of water, but I added much less sugar and it still tastes fine.
